Prep/Dishwasher

As a Prep/Dishwasher, you will be responsible for preparing ingredients and supporting the kitchen team in all pre-service tasks. This includes washing, chopping, slicing, and portioning ingredients according to recipes and specifications. You will also be responsible for maintaining cleanliness in the kitchen by washing dishes, utensils, and kitchen tools throughout the shift, as well as collecting dishes from the dish drop stations. Additionally, this role involves daily prep production and putting away deliveries, ensuring ingredients are stored properly. The ideal candidate will have strong attention to detail, the ability to multitask, and a focus on maintaining a clean and safe workspace.


Key Responsibilities:

Ingredient Preparation & Daily Production

  • Wash, peel, chop, slice, and dice vegetables, fruits, and other ingredients as directed by the kitchen leadership. 

  • Measure and prepare ingredients according to recipe specifications, including dressings, sauces, and portioned proteins. 

  • Assist with daily prep production, dividing tasks throughout the day based on skill level and time required for each item.

  • Put away delivered orders, ensuring proper storage and labeling for storage. 

  • Assist in pre-cooking tasks, when necessary to prepare items for service. 

Kitchen Setup & Organization

  • Ensure that the kitchen is properly stocked with prepped ingredients, tools, and supplies at the start of each shift. 

  • Set up and organize workstations efficiently, making sure that all ingredients are easily accessible for the cooking team. 

  • Monitor and maintain ingredient inventory levels, notifying management of any shortages or supply needs in advance. 

Dishwashing & Cleaning

  • Collect dishes from the dish drop stations and ensure they are washed, sanitized, and returned to their proper place throughout the shift. 

  • Wash dishes, utensils, and kitchen tools throughout the shift, ensuring that the kitchen remains organized and sanitized. 

  • Clean and sanitize prep areas, equipment, and tools regularly to ensure the kitchen adheres to health and safety regulations. 

  • Assist in maintaining cleanliness throughout the kitchen, including sweeping and mopping floors, and taking out the trash as needed. 

  • Assist with end-of-day cleaning and closing procedures as directed by the Lead Cook or Kitchen Manager.

Team Collaboration & Communication

  • Work closely with cools and other kitchen staff to ensure that ingredients are prepared and available when needed during service. 

  • Support other cooks on their stations when they need assistance. 

  • Communicate clearly with kitchen management about any issues, such as ingredient shortages or equipment malfunctions. 

  • Assist in receiving, inspecting, and storing deliveries to ensure the quality of freshness of ingredients.

Food Safety & Sanitation

  • Follow all food safety protocols, including proper handling, storage, and labeling of ingredients to maintain freshness and prevalent contamination. 

  • Assist in maintaining food storage areas, ensuring proper rotation of ingredients to minimize waste and spoilage. 

  • Ensure ingredients are prepared safely and free from cross-contamination. 

Time Management & Efficiency

  • Prioritize and complete prep tasks efficiently, ensuring that all ingredients are ready for use by the time service begins. 

  • Manage multiple tasks during peak times while maintaining a calm and organized workflow. 

  • Adapt to the needs of the kitchen teams by assisting in other duties as required. 

Support for Kitchen Operations

  • Assist cooks by preparing additional ingredients or performing other tasks during service as needed.

  • Maintain a clean and organized prep area throughout the shift. 


Qualifications:

  • 2+ years of experience as a Prep Cook in a similar kitchen role. 

  • Strong knife skills and knowledge of basic food preparation techniques. 

  • Ability to work efficiently in a fast-paced environment, with a strong focus on organization and cleanliness. 

  • Understanding of food safety and sanitation regulations. 

  • Strong communication skills and a willingness to work as part of a team.

  • Ability to lift and carry up to 50 lbs, as well as stand for extending periods of time.
