Lead Cook

As the lead Cook, you will play a crucial role in ensuring that the kitchen operates smoothly and that high standards of food quality are maintained. You will be responsible for preparing, cooking, and plating dishes according to the Sipeos menu and recipes. You will work alongside other kitchen staff to ensure that food is prepared efficiently, safely, and consistently, meeting both our high standards and guest expectations. This position requires strong leadership skills, as you will act as the de facto person in charge when the Kitchen Manager (KM) is unavailable. You will coordinate with the General Manager (GM) or Assistant General Manager (AGM) regarding orders and ensure that the kitchen continues to run seamlessly. The Lead Cook is responsible for knowing all aspects of prep and the entire menu, capable of working any station and stepping in wherever needed to support the team. This role offers an opportunity to grow in understanding kitchen operations, including an awareness of costs, though not to the same extent as the KM. The ideal candidate will have experience in a high-volume kitchen, a strong work ethic, a passion for culinary arts and is eager to learn more about the business side of kitchen management. you will be responsible for preparing, cooking, and plating dishes according to the Sipeos menu and recipes.


Key Responsibilities:

Food Preparation & Cooking

  • Cook and plate dishes with precision and consistency, adhering to the specific recipes and presentation standards of Sipeos. 

  • Manage cooking times and techniques for various menu items to ensure they are prepared to order and meet quality standards.

  • Ensure that all food is prepared to order and delivered to guests promptly, maintaining the highest levels of flavor, quality, and presentation.

  • Ensure that any guest allergy restrictions are taken into account and prepare food according to strict guidelines to avoid cross-contamination. 

Recipe & Menu Knowledge

  • Maintain a deep understanding of the Sipeos menu, including ingredients, preparation methods, and portion sizes. 

  • Follow all recipes precisely, ensuring consistency across all dishes. 

  • Stay updated on seasonal menu changes and special promotions, adapting quickly to new offerings. 

Team Collaboration & Communication

  • Work closely with other cooks, prep staff, and the FOH team to ensure efficient service and communication throughout the shift. 

  • Communicate clearly with the kitchen team and management about any issues that may arise, such as ingredient shortages or equipment malfunctions. 

  • Support and assist fellow team members during busy shifts, ensuring that the kitchen operates as a cohesive unit. 

Food Safety & Compliance

  • Follow all food safety protocols, including proper handling, storage, and cooking temperatures, to ensure guest safety and compliance with health codes. 

  • Maintain accurate records of food preparation, storage, and sanitation practices to ensure compliance with local health regulations. 

  • Monitor food quality throughout the cooking process, ensuring that every dish meets Sipeos’ high standards for freshness and presentation. 

  • Maintain a clean, organized, and sanitary work station at all times, following health and safety regulations. 

Time Management & Efficiency

  • Work efficiently during high-volume periods, ensuring that food is prepared and delivered to guests in a timely manner. 

  • Prioritize tasks effectively, managing prep and cooking times to meet service demands without compromising quality. 

  • Adapt quickly to changes in guest orders or special requests, ensuring all dishes are prepared to specification. 

Inventory & Stock Management

  • Assist in receiving, inspecting, and properly storing deliveries to ensure freshness and quality. 

  • Minimize waste by adhering to portion control guidelines and storing food properly to reduce spoilage. 

Team Leadership & Support

  • Lead the kitchen team in the KM’s absence, ensuring smooth operations and consistent communication with the GM or AGM.

  • Support fellow cooks by stepping into any kitchen positions, such as line cook, prep cook, or dishwashing, as needed. 

  • Serve as a mentor to less experienced team members, offering guidance and support to ensure consistency and quality in all kitchen operations. 

  • Coordinate with the GM or AGM on orders, ensuring that the kitchen remains stocked and prepared for service when the KM is not present. 

Comprehensive Knowledge & Flexibility 

  • Master the prep, cooking, and plating techniques for all menu items and stations, maintaining a high standard of presentation and quality. 

  • Actively support the kitchen team by taking over prep on specific stations and assisting any cook who needs additional support during service. 

  • Maintain an awareness of kitchen costs, including ingredient use and inventory, and work closely with the KM to better understand the business aspects of the kitchen.


Qualifications:

  • 3+ years of experience as a cook in a fast-paced, high-volume kitchen. 

  • Strong understanding of food safety and sanitation regulations. 

  • Ability to follow recipes accurately and consistently, with attention to detail in food preparation and presentation. 

  • Ability to work well under pressure, manage time effectively, and multitask in a busy kitchen environment. 

  • Strong communication skills and a team-oriented mindset. 

  • Flexibility to work evenings, weekends, and holidays as needed.
